Clarification

Ran Extended Self Test and after a couple of hours noticed it said time remaining one minute and it stayed like that for one hour. Wouldn't expect these time estimates to be very accurate but could this indicate a problem? Also, not sure I understand the Background button for this test. After pressing it I could find no way to get it back. How do I know if the test completes and see the results? I am running it again. Lastly, what does the Response: 0xF9 indicate?

The estimated time for this test is determined by the manufacturer and valid only if the hard disk is "idle", does not perform any other actions.
As you may notice, the hard disk can be used for reading/writing during the test, but all operations (even a single read command) can delay the disk test.
This is especially true for the system hard disk: as Windows (and the active applications) constantly perform reads/writes, the test may run for much longer (even many hours longer) than the displayed estimated value.
This is completely normal (does not indicate problem), it is described in the Help.

Technical background: during the test, it is only possible to get the % completed but only with 10% steps. As you may noticed during the test, the "Response" changes (0xF9-0xF1) where the last digit shows the progress (remaining time in 10% steps, eg. 0xF9 = 90% remaining, 0xF1 = 10% remaining). The progress bar indicates the actual progress during the test and shows the status (running, completed or the error found) so it is not really required to check this response code.

Yes, the "Background" button allows using other functions of the software (for example starting test(s) on other hard disks). This closes the progress window as you see. To get the actual progress and results, please check Information -> S.M.A.R.T. details.
There you can check the estimated time requirements for each tests and also you can see
- the result of the last tests
- when the last tests started
- how much time they were actually running
